After testing BBC Food’s Egg Fried Rice last week, we did it again! Using the same ingredients as Hersha Patel, we tried it again on our own terms. While we were at it, we also made four next level fried rice recipes for you. 😋

Fried rice is such a flexible dish that you can use just about anything. So don’t get too caught up on the ingredients and go with what you have. 😉

Make sure your wok is super hot when making fried rice. We had a mixture of leftover and fresh rice. Watch the video to find out what we do to prepare fresh rice. 🍚

Ingredients:

All the recipes are for 2 servings. We used approximately 2 cups of cooked rice.

Thai Pineapple Fried Rice

1 Chicken Thigh, ¾” dice and marinated in soy sauce, cooking oil, sesame oil, cornstarch
1 cup Pineapple, fresh or canned (strained)
2 eggs, whisked with a splash of water and sesame oil
½ cup Roasted Unsalted Cashews
½ cup Peas, thawed
⅓ cup Scallion, chopped
1 tsp Curry Powder
2 tsp Fish Sauce
1 tbsp Soy Sauce
1 tsp Sesame Oil
1 tbsp Garlic
Salt to taste
Fried Crispy Scallion to Garnish

Spam and Kimchi Fried Rice

½ cup Spam, diced
⅓ cup Kimchi, roughly chop
½ cup Onion, diced
1 tbsp Garlic
1 tbsp Gochujang
2 tsp Sesame Oil
Salt to taste
2 Egg, fried
Seaweed, cut to thin stirps to garnish

Gold & Silver Fried Rice

1 Chinese Sausage, sliced
8 Medium Sized Shrimp, marinated in white pepper, sesame oil, salt
⅓ cup Scallion
½ cup Gailan Stems, sliced
3 Egg Whites, whisked with a pinch of salt
3 Egg Yolks, whisked with a pinch of salt
1 tsp Fish Sauce
1 tbsp Soy Sauce
1 tsp Sesame Oil
Salt to Taste

Japanese Unagi Fried Rice

½ fillet of Japanese Unagi (eel), ¾” dice
½ cup Onion, diced
½ cup Corn
⅓ cup Scallion
2 Eggs, whisked with a splash of sesame oil and water
1 tbsp Unagi Sauce
1 tsp Japanese Soy Sauce
2 additional slices of Unagi, Bonito Flakes, and/or Seaweed to garnish.
