Welcome to Umami Dream and in today’s video I am going to show you how to make eel sauce at home.
Eel Sauce is also known as Unagi, Kabayaki or Nitsume. It is a sweet and salty sauce that goes great over grilled fish or chicken and is a common drizzle over sushi. Savory, sweet and saturated in flavor, this amazing Homemade Unagi or Eel Sauce could be the next dream sauce for your dishes.
Traditionally, it is commonly used on grilled eel or different dishes that feature grilled eel such as unagi don or unagi sushi. Although there are many commercial brands of the sauce available in the market, the best eel sauce is the one you make at home.
To make this eel sauce at home you only need 5 ingredients –sake, sweet sake, Rice vinegar, brown sugar, and soy sauce. Combine the mixture in a small pot and let it simmer over the stove until the sauce caramelizes and thickens to your desired richness.
The great thing about making the sauce at home instead of buying the pre-made stuff is you can decide on the sweetness and saltiness level. And there are no additives in the ingredients.
So, let’s make this simple Unagi / eel sauce recipe at home.

▶️ The Recipe:
Ingredients:
* Soy sauce 30 ml
* Sweet sake 30 ml
* Sake 10 ml
* Rice vinegar 5 ml
* brown sugar 2×1/ 2 tbs
▶️ Method and Instructions:
* In a glass take all the ingredients and gather them.
* In medium high heat pan add all the ingredients that combine in glass
* Now add brown sugar 2×1/ 2 tbs
* Stir up
* When it starts boiling, lower the heat to the low and keep on simmering
* Boil it down to 60-70% level
* Turn off the heat and let it chill. The sauce will be even more thick because it cools.
* Put it in a cup
* Ready for serving
