INGREDIENTS:
2.5 lb potatoes
3 medium carrots
3 hard boiled eggs
1 small yellow onion, diced (1/2 cup)
2 Tbsp olive oil
3 Tbsp white vinegar
1 chicken bouillon
1 cup mayonnaise
salt to taste
INSTRUCTIONS:
1. Peel and cut potatoes and carrots into quarters. Boil them in salted water for 25 minutes or until tender. 15 minutes before being done, add the whole eggs and boil all together.
2. Once boiled, drain water and let it cool completely. Once cooled, cut carrots and potatoes into small cubes and add them to a large bowl.
3. In a small sauce pan over medium heat, add olive oil and let it get hot. Add onion and vinegar, mix together and cook for 2 to 3 or until onions soften. Add chicken bouillon and dissolve it. Set it aside.
4. Peel eggs and place them on a plate and mash them with a fork. Mix mashed eggs with carrots and potatoes.
5. Add mayo and onion mixture and mix to combine. Taste it and add salt if needed. Cover it and place in the fridge for at least 30 minutes.
