I make sancocho the same way, but don’t add rice to the soup.

Ingredients:
To season the chicken:

Half of a 3 lb chicken
1 tsp dried oregano
1/4 tsp black pepper
1 package of chicken bouillon powder/sazon
1 large lime
2 tsp minced garlic (3 cloves)

1 Tbsp vegetable, canola or corn oil
1 lb Kabocha squash cut into pieces
2 stalk of celery, divided
1 large cubanelle pepper, divided
8 whole all spice, divided
8 sprigs culantro, divided
1 medium onion, cut in half
8 cups of water
1 large carrot, diced
6 sprigs of cilantro
3/4 cup of long grain rice
1 large lime
3 knorr bouillon cubes (taste the brother to adjust seasoning)
