Learn how to make Dad’s SOFT & FLUFFY Dinner Rolls or Trini Hops Bread. Traditional hops bread were leavened with the extract of male hop flowers instead of yeast. The bread was more crusty than the hops bread sold nowadays in bakeries around Trinidad and Tobago.

You can find hops bread being sold with curried channa, chow mein, black pudding, fried chicken, geera & roasted pork, geera chicken & gizzards and many others. It’s quickly becoming a popular, convenient & cheap breakfast street-food. Freshly baked hops always calls for a nice thick spread of butter or some cheese and pepper sauce, and some Trini chocolate tea on the side (it must be in an enamel cup 😃). How do you like yours?

My recipe is slightly different than daddy’s, but if you’d like a quicker proofing method, check it out here:

Ingredients:
4 cups of all purpose flour
2 teaspoons of salt (Daddy only added a pinch to his bread)
3 teaspoons (1 tablespoon) of instant yeast
4 teaspoons of sugar
2 tablespoons of coconut oil
2 tablespoons of lard
1 3/4 – 2 cups of warm water (110 F-115F)

Bake at 350 F for 20 minutes.

Notes:
1) Daddy actually kneads the dough for 20-30 minutes.

2) For a more golden color, bake for 10-15 minutes more.

3) You can mix different types of flour (eg. 1/2 all purpose, 1/2 whole wheat OR oats, buckwheat etc.)
