Doughboy is a dish synonymous with the beautiful island of St. Vincent and the Grenadines. Many other Caribbean islands also prepare it, altering ingredients and making what is known as Johnny Cake. (It is also distinct from what Bahamians call doughboy). This doughboy recipe is one passed on from my grandmother in St. Vincent to my mother and then to me. In this video, I’m also making REAL hot cocoa – what we West Indians like to call cocoa tea and it’s from the raw cocoa sticks made by my grandmother. They were sent to my mom in Barbados then here to me – all the way in NYC! I’ll be complementing these these Caribbean delights with some codfish or what we like to call salt fish. This dish makes for a great breakfast in our region or even a lovely supper.
